A recipe inspired by Aura Botanica

Inspired by the key ingredient of the new Aura Botanica range, Coconut Oil, Detox Kitchen have curated a bespoke Spring Greens Salad recipe for Kérastase, that is not only delicious but also healthy.
Ingredients for 2 persons:
- 100g puy lentils
- 1/2 small broccoli, cut into florets
- 100g mange tout, finely shredded
- 1/2 small courgette, grated
- 50g edamame beans
- 50g kale, finely shredded
- 20g flaked almonds, toasted
- Cracked black pepper
- 1 tsp coconut oil, melted
- 1 tsp honey
- 1 tsp tamari
- 1 tsp lime juice
- 1/2 tsp sesame oil
Place the lentils in a pan with three times the amount of cold water. Place on a high heat, bring to the boil then simmer until the lentils are tender, around 10-15mins. Drain the lentils and rinse them under cold water. Tip them into a large mixing bowl and set aside.
Prepare all the vegetables. Add all the raw vegetables to the lentils apart from the broccoli. Blanche the broccoli in a pan of boiling water for 2-3 minutes. Rinse under cold water and drain. Add them to the lentils and mix through.
To make the dressing simply combine all the ingredients in a bowl. Pour the dressing over the salad and mix.
To serve sprinkle over the toasted almonds and cracked black pepper.
